Not a true dandelion, but in the same family as that pesky weed in your lawn.
Italian Dandelion is a chicory, like endive and escarole. It is packed with nutrients so eat up!
How to Prepare:
Boil the greens for 10 minutes (this removes much of the bitterness). Then sauté some onions, garlic, red pepper flakes, and the boiled dandelion greens in a skillet. Add salt, pepper, and a squeeze of lemon juice to the finished product.
